HORCHATA DE CHUFA

"TIGERNUT MILK"

Here is our recipe for making Valencia's famous Horchata de Chufa in the comfort of home.

Spanish horchata (Orxata) is a refreshing, lactose-free beverage you can easily prepare at home. Here is our recipe — feel free to experiment and make it your own!

 

For 4 servings of horchata, you will need about 500g of tigernuts and 1 litre of water.

Soak the tigernuts for at least 24 hours, draining and rinsing when necessary. Once the tubers are rehydrated, blend them with 1 litre of water. Using a nut milk bag, strain the mixture, making sure to squeeze out every drop of superfood goodness!

 

Our tigernuts are naturally sweet so no additional sweetening is needed. Try adding orange peels or cinnamon sticks to spice things up. Chill the horchata overnight to let the flavour develop even more. There will be some sediment at the bottom — that contains a lot of the nutrition and flavour — so shake well and mix it all back in before consumption.
